Mexican: Pico de Gallo (Master Recipe)

Pico de Gallo (aka salsa fresca) is the essence of Mexican cuisine. Simply combine a few raw ingredients, add some salt and you’re done. Add a spoonful or two of this zesty condiment to any dish and you are instantly transported to Mexico. Don’t have time to make this at home? Avoid the supermarket variety because they cheat and use green peppers instead of jalapena peppers. Instead, head to your local Mexican grocer instead and get the real deal.

  2. Use immediately as “fresh salsa” with tortilla chips or tacos (can be stored in refrigerator in an air-tight container for about a week)
